As we recommend marinating our steaks, it was wonderful to read in the Mayo Clinic – Health Oasis – Ask the Mayo Dietitian – 6-28-00 – web-site that studies have shown that marinating meats prior to grilling reduces substances that are cancer-causing called heterocyclic amines (HCA’s), caused in red meat, chicken and fish when cooked over high heat, burned or charred. "Marinades also have antioxidant ingredients, various vitamins and other health-enhancing phytochemicals that have been associated with potential protection from heart disease and cell and tissue damage."
